How in the hell was Rhodey able to get in and out of the Mark II armor after he stole it from Tony's lab? Prior to the Mark VII (except for the Mark V suitcase armor) all armors required a large gantry to basically assemble the suit around the person wearing it, so How was Rhody able to put the suit on even before it was tricked out into the War Machine armor, let alone after?

We can assume that that suit was able to fit Rhodes because Stark designed it that way. I think it's safe to say that Stark was planning for Rhodes to take over as Iron Man because he was under the impression that he was going to die. Rhodes would become Iron Man and as you saw he signed over his company to Potts.
Think back to the first IM when he tried to bring Rhodes in on it from the start but Rhodes thought Stark's head wasn't in the right place. Also towards the end of the movie when Rhodes looked at the armour and said "next time baby." Moving forward to the second movie we can assume that Rhodes most likely have worn that suit a few times.
