Why did he take that Aussie guy's Rolex at the factory?

It seems like he stops specifically just to take this guy's watch. He just likes expensive gold watches? And there's a crowd of poor Phillipinos pharmaceutical workers all around him - they don't notice this?

I think he took it so that he could tell the time. The police would come soon, and he wanted to figure out what radius the spread would come out to. I think you have to get away from the factory by a certain time before the police set up roadblocks and stuff like that.

And because it was expensive... like a woodsman... never know what you may need.

There are a LOT of little details to show that he's 'thinkin, always thinkin'.

ALSO: The director says they went through '40 drafts', so many scenes contain bits that would be connected to other scenes. The deleted scenes show several details like that.

The watch was on the wrist of the Philippino fishing boat captain at the end of the film-he had used it to barter passage-if he just needed a watch, he had plenty of opportunity to get one by buying one or getting one from one of the knocked out security guards-I would think the primary reason to grab it was for its monetary value.

The Filipino workers are all panicking, so they don't notice him souveniring the boss's watch, which we gather he thinks may come in handy further down the track, which of course it does, as outlined above.🐭

He knew they'd need money and a valuable watch was the next best thing.

He told Marta to run with the $40K he had in his jacket.

Marta refused to leave him.

Marta goes off buying meds for Aaron while he's back at their hotel.

Cops shows up and Marta yells out to Aaron.

Aaron quickly gathers his things, but I'm not sure if he took the jacket with the money in it. So to be sure that they can bargain their way out of the country he steals the expensive watch.

That's my take on why.

Ah, now that's pretty good thinking. Thanks.

Yep,
he left his jacket and cash behind... but that was AFTER he took the watch.
You need to remember he has lived by a 24 clock for his daily meds for years and he was starting to lose his focus when they entered the facility. He may not have been entirely sure why he did it at the time - i considered it an instinctive decision from a guy who had come to fundamentally depend on his watch, so I wasn't looking at it from a purely logical point of view.
But I also agree with the logic - wearing a $5,000 watch is like wearing a money belt, and they used it to compensate the boat owner for escape and safe passage in the end so it was shown to be a smart move. But that was his happy ending - he no longer needed it because he no longer needed the meds... he was finally free. The watch was a symbol.
