They were hiking way too slow

In those wide shots of them walking, there's no way in hell they would have made even 10 miles a day.

Not to mention that in order to finish an AT thru-hike in a single season, you have to average ~20 miles per day.

2160 miles/20 miles per day=108 days or 3 1/2 months
2160 miles/10 miles per day=216 days or 7 months

Since the hiking season runs from mid-March thru mid-October, which is 7 months, there would be enough time to make it at the slower pace.

The average, per the Appalachian Trail Conservancy is a "week or two shy of 6 months", implying an average of 13 miles per day.

So, no, they weren't going too slowly, at least not after their tortured first days.

Read the book. They don't finish or even come close. But, as Bryson says " I hiked the Appalachian Trail."

They just wanted to try. They acknowledged only about 10% make it. Actually considering the way points shown iirc - Fontana Dam, Smokies, Shenandoahs, around that overlook, they were doing pretty good. The Whites and then Maine are really hard and you have to be close to Katahdin, by sometime in September to be allowed to finish.
