It was indeed the room of 'that housekeeper', but the residents said they never saw him - even though clearly someone had eaten there recently.
... That's what I found confusing and also creepy.
No, the housekeeper was in the movie.. he was the guy with the glasses who became infected by one of the cops.

The really skinny woman is the girl "Medeiros." She was the subject of the articles kept by the Priest/Scientist. We see those articles as Pablo videos them, on the walls and the desks.
She was thought to be possessed, so the Vatican sent that Priest. He found out it was a virus & was trying to cure her. He couldn't.
The little boy in the attic was probably another kid the Priest tried to vaccinate.
One of them must've infected Max, the dog, who in turn infected little Jennifer.
