Does anyone know what highway in New Mexico they filmed on? Near what city? There are different scenes, some with desert foliage, others with flat plains. Is the diner an actual place or just a facade set up?

The place looks like the diner in the first part of Natural Born Killers if you want to go to those fans and ask location.
