How do they stay open if Ramsay finds all these freezer, mold, old food, rotten, problems
Don't restaurants get inspected usually. If the inspector saw the dead rats and insects running around the kitchen, wouldn't these restaurants get shut down by the inspectors?
Where I live, places go a long time between inspections. I don't know if it's due to short staffing at the Health Department, but it's true. When they do inspect, it takes pretty much a dead body in the kitchen to be closed. Sorry if that's gross! I read the reports online and you wouldn't believe what a place can get away with. I've read reports that would make you sick, and the place was allowed to stay open on a provisional license! I've also read reports where the restaurant was cited for multiple infractions be given an excellent rating! It's scary to go out to eat, at least where I live, for sure.
In a lot of places, there are too many food establishments for the number of inspectors, so one place can easily go years between inspections. Sure, they're always at risk of an inspector suddenly showing up, but I guess they figure they'll deal with that if/when it happens.
I'm sure they clean up enough for it when the time comes. I know around here they usually do all of the areas restaurants around the same time, meaning word can get out that they are around so they can get things cleaned up in time
