Well, if they are going to use the old kill-the-leader-and-the-unbeatable-army-stops idea, at least they've put in some groundwork. Like at Hardhome, when the Night's King raised his arms and all the dead humans got up and became part of his army of the dead, he's obviously a highly powerful magical being and the good guys have no equivalent magical being on their side so he's going to be REALLY hard to kill.
Still, if he's what I suspect - a personification of universal or natural forces, you'd think one of the other White Walkers would assume his power if he were destroyed. I think the Night's King may actually be one of the Old Gods, and how do you kill a God? That which he personifies still exists.
