Yeah, that was a major issue. I guess the mom hurried back from the semetary so that she could help kill her husband.

Do we really know how long Louis was knocked out for? I only saw the movie once and I don't remember the finale too well.

No, the scene jumps from Racher being dragged to Louis waking up. No reference to time passed, but its still night (pressumably the same one).

unless of course since Rachel was just killed she was still fresh , unlike the daughter who was buried maybe days after she had died

I suppose you could make a claim that the fresher the corpse (time from death) the quicker the ressurection. We dont know how much cat took, but Racher was clearly faster than Ellie and the father seems to be even faster than that.
