What I don't get after seeing this movie twice...
....is why Dracula didn't just turn Jonathan into a vampire? That would have solved all of his troubles, and would have made this movie a lot shorter.

I wonder since they show vampires being able to give birth and raise babies to adult vampires if that is how they reproduce in this universe instead of the bite.
Also in most vampire mythology it takes a while to turn a human into a vampire and he was trying to hide the evidence of a human without actually killing him because he was a good guy.
Could also be because he would consider most humans not worthy of being a vampire like him and it wasn't until the end where he really likes Jonathan. There could also be a hint that he would end up turning him because he tells Jonathan he would make a great vampire.

He should have plain killed him. He pretty much destroyed his daughter's future by letting her go with him. That Johnny is an annoying dumb a$$

It would be a permanent "solution" to a temporary problem. If Dracula turned Jonathan, he'd have to deal with having an annoying vampire Jonathan and teach him the ropes. He was busy enough trying to rein in his own daughter and run a sanctuary for monsters. Did he want to add more headaches to his existence?
More importantly from a thematic perspective, it would have gone against the moral of the entire movie. Yes, that would solve all of Dracula's problems, but it would suggest the only way to fit in with monsters is to become a monster oneself. Plus it would have denied Dracula the opportunity to learn humans aren't the bad apples he thought they were.
This movie has a slight message about discriminating different people.
Humans don't understand monsters and attack and kill them. Monsters are afraid of humans and avoid them.
They wanted a human and a vampire to fall in love and have a human be accepted among monsters and monsters be adored by humans.
Turn the guy into a vampire would break the whole message.
