There are a few reasons that this is done.
1. It sucks. Most common. Many films are held over if they are bad, this year alone we had DAYBREAKERS, REPO MEN, and YOUTH IN REVOLT among plenty others, but those are the most noted. While not all of those suck, they weren't that great to withstand the competition and the studio didn't want to pump in $30M on a marketing campaign for no reason.
2. Tentpoles. Many films are made to be tentpoles, but do to actors other commitments, they have to film the movie early to fit it in their busy schedule. Then the studio just sits on it. Same with PR commitments. If a star is too busy to do the talk shows and press, the actors fit this in their schedules too.
These are the two biggest reasons this is done. Others include a crowded slate for the company due to merging/combining which happened a couple years ago when all of the major studios folded their mini-divisions. So (playing with #s) when WB who had 20pics lined up for the year folded with New Line (who had 10 pics for the year) and Warner Independent (who had 5 pics for the year), that is now 35 pictures that they had. That is 3 per month! So obviously some had to be dropped or shuffled around or acquired to do other studios.
