I don't think there's a definite year for the original trilogy, the first X-Men was released in 2000, of course, but at the start of the movie it reads: "The not too distant future" so I guess it's set in the early 2000's. X2 and Last Stand seem to take place shortly after each other, maybe gaps of just a few months between each one.
I think it's stated somewhere in Origins that it takes place in the 80's,though I haven't seen it in a long time so I could be wrong. The Wolverine is sometime after Last Stand, but it could be in between a year and 20 years as Logan doesn't age like a normal human it's hard to tell.
The future scenes in DOFP are in 2023,cant remember if it's stated in the movie itself but writer Simon Kinberg and director Bryan Singer have both stated that date in interviews.

I hope this was of some help!
