Why did they have to spoil the end of the movie with...(SPOILER)

Possibly for a certain surprised reaction. Perhaps it adds suspense and makes people all the more want to see or have a second movie.

I don't think it spoiled the ending, I feel it was perfect.

They may think they're safe...but they're still being watched. The Hills Still Have Eyes or The Hills Have More Eyes would have been a good title for the sequel. Even if they weren't being watched (that scene isn't in in the original) they're still not safe because they're literally stranded in the desert with no shelter and limited food and water. The ending of the original is just as open-ended. IIRC, the screen turns red and credits roll immediately after Doug kills the last of the cannibals with a blow to the head, as he realizes he's become just as bad as they are (at least that's my interpretation).
