When Jack Frost tricked Scott into giving up his Santa job so he could take over, he became Santa annd grew his beard!!!! How come Jack remained thin though??? He didn't grow a big belly like Scott did when he became Santa!!!

Because he became Santa for the wrong reason so they didn't have him look like Santa.

Perhaps since he was already an immortal character it didn't fully change him like it would for Scott.
