Does anybody know if Gambit possesses the ability to mentally create, control and manipulate pure kinetic energy to his every whim and desire?

Yep he does. He removes Alan Rickman's clothes at various points during the film using just his energy manipulation.
Rickman, ever the professional, simply carried on filming. They cobbled all the takes together for the finished film
