Stan says "Well I'll be a monkey's Uncle" and a monkey comes up to him. Is that the same monkey from Futurama?? Do they exist in the same universe?

Family Guy exists in the Futurama world as seen with the '12 laughs a year' FG calendar and Family Guy & American Dad exist in the same universe so Yes, American Dad & Futurama exist in the same universe despite [to my recollection] having no interaction with each other.

It should be noted though, that the 'Monkey's Uncle' & Günter are not the same monkey.
