I was wondering what is the best way to defeat Salazar, since I am having a hard time beating him. I know that I have to use a lot of pistol ammo and the knife. I tried the Rocket Launcher, but it didn't work. I would appreciate if someone would have step by step walkthrough to beat him.

You can beat Salazar with 2 hits.
First off, as someone else pointed out, fire the rocket launcher directly at the eye thing.
You should see a cut scene, where his body is exposed. Now shoot him in the heat with the 'magnum type' handgun.
He should die right there.

I'll tell you how in three modes:
1. On the easy mode you only need to shoot the eye until the flower opens and use rocket launcher that you got in the castle and shoot him, done!
2. On the normal mode you need to open the flower about couple times by shooting the eye, first open shoot him with that rocket launcher, the second you can use magnum, done!
3. On professional mode that eye is tougher and you also have to open the flower couple times, shoot it with TMP or tuned up shot gun until the flower opens then shoot him with rocket launcher, the second open shoot him with tuned up magnum, done!
