It's on a bulletin board in the room with the security monitors (the ones the Ganados shut off when Leon sees Ashley). Looks like some giant Plaga-ized hamster. When I first played this I thought it was going to be the final boss, instead of Saddler's actual arachnid form.
Interesting image, never noticed that before. It looks a little like the giant fish thing you fight in the lake, but a more creepy version.
