What exactly was he trying to distill?

Was it the smell of their souls? I noticed that his victims were all kind (Pure souls), starting from the peach girl who was giving some of her peach to the poor.

for him smell=soul...we all have a distinct scent but most everyone has lost the ability to consciously smell our unique scents; those unique smells were what he was trying to distill

They were actually yellow plums, I believe.

And he specifically targeted young girls who were old enough to ovulate but whom hadn't yet been deflowered (neatly alluded to in the early scene of him smelling the "frog stones" which were actually eggs), so he was essentially distilling their innocence, hence his acquittal while wearing their scent.

he did not use the prostitute for the perfume, she was a test
