Was the painting changing throughout the film? I could've sworn it looked different all the time.

Yes, by the end of the film, there was only 1 mask left in the painting.

I think every time someone died, a face would disappear. I'm not sure though.

No, I don't believe the painting was changing. There were two. One painting above the main door had just one face and another painting above the sitting area where they all drank and played music had nine faces.
