What's the deal with Clyde's head being kicked off? Why did William and Annabelle jump back and then Belle quite viciously kicked the poor guy's head off, when just a moment before William had been trying to help him? What did I miss?

I think when they figured out he was full of straw it quite frankly scared the hell out of em.
