A show about Monica and Chandler would have been way better.

I was just thinking as I'm watching the last few episodes of Friends, that they could've done a series about them adjusting to life in the suburbs with their babies. I'm wondering if maybe they were setting it up for that possibility and it just didn't happen. They weren't moving too far away, so it would've been totally plausible to have any or all of the "Friends" characters show up from time to time, too.

I dont think so. As soemone has pointed out, comedies about a couple with kids are a dime a dozen.. and I can never really see Chandler as a family man, so I think its best to just let them disappear into " a house in the 1950s" as Ross Puts it.

Chandler's character was much stronger in the earlier episodes. Once they put him with Monica his role changed and was less funny. Notice how early on Chandler was the laughing stock and pathetic one of the group but then midway through, that role switched to Ross (pretty much after the London wedding when Emily dumped ross and Chandler hooked up with Monica). It wouldn't have been funny. Jennifer Antiston couldn't carry a rachel show on her own (and likewise for David Schwimmer), Lisa Kudrow might have been able to but her character was married. Joey was really the only one a spin off would have worked for. The show stands fine on its own if Friends is ignored.
