Because this movie was poorly thought out and full of holes when it comes to how the orders work.
In the book, the orders were suppose to stick once they were given. As example, when Ella was eight her mother ordered her to never tell anyone about the curse and that order held until the curse was broken. However, orders could be countermanded by later orders on the same subject. So when Char says, "Marry me," Ella says "Yes." But when her step-sister immediately tells her not to marry Char then Ella says she won't marry Char.

No, the only time that happened was when the elf told her to forget that when the ogre told her to get into the pot. Oh, I see what you mean: You give one order, then another order is given right afterwards so it overrides whatever the other one was. Maybe that wasn't an order Char gave Ella.
