Forgive me if this has been asked (I searched and didn't see it).

Why did Stella agree to the date with Steve? That seemed like a big risk for zero gain (and, of course, it blew up in their face when Steve recognized the "devil" phrase and realized she was John's daughter, forcing the crew to reveal their presence, ruining their element of surprise). Why not give her a wedding ring when she posed as "Becky the cable girl" and cut that stuff off at the bud?

Because they needed him out of the house at a known time, in order to take the gold.
If you recall, she had no intention of actually showing up for the date, until they realized there was a big party next door to his house, and they wouldn't be able to blow the security gate open as they needed to, and thus the job would take much more time.
