Maybe the school had some kind of nursery room that she put him in for them to watch over him while talking with the principal because if she took him in there with her and he needed something, she couldn't have done anything in there.

The first time I noticed this, I laughed. The image of a barely visible Jack Jack in the backseat (and after not being seen in the school with his mom) is downright funny to me. And cute.

As for his whereabouts during Helen’s meeting with the principal, if the school didn’t have some sort of nursery room as previously mentioned, it’s pretty likely someone outside the office, who works at the school, offered to look after him. Maybe it was someone Helen knew quite well.

Bob is a schizophrenic psycho murderer, and Helen is a BAD MOM, because she secretly doesn't care about the family at all, but just pines for her superhero days, BUT virtue signals so hard she can never let anyone know this.
