At one point Fitch zooms in on Easter's hand and it looks like the female alcoholic's hand is on his. It's then that the bad guys realise that Easter's a fake.

What does it mean though? Did I miss something?

That was, I think, after the pledge of allegiance. Easter wanted to do something patriotic for a person he knew. The alcoholic lady patted his hand as a gesture of comfort. Fitch sees this and realizes Easter manipulated the jury to do that and hence, Easter becomes Fitch's new target.
