This sort of question frequently arises and generally you can only speculate on the reason.
McDermott's character's murder provides the basis for the whole film.
You're right, but he's still only in the movie no more than the first 3 minutes. Guzman's character is in the story frame for much of the movie, but is relatively unimportant and doesn't have a lot of lines.
Sometimes I understand they undertake this sort of work to do favours for other actors/producers/directors and they may not want this work to clash with existing studio contracts etc. I haven't seen the dvd and may be the commentaries give some sort of clues to what went on.

Interesting thread question I've seen come up before on a couple of other boards regarding the earliest onscreen deaths of major stars/characters. Dylan McDermott isn't exactly an A - lister, but is a well- known star and plays a pivotal character in this movie and you'd generally not be expecting him to kick the bucket in what must be close to, the first 2 minutes of a movie. The first, in what IMO, are a number of neat twists in the film.🐭
I wondered the same thing, especially about Guzman. All of the other jury members were given screen credit. Why not Guzman. He is a well known actor. However he is listed in the movie's Wikipedia page.
