She's listed as being in the movie, and even had her name amongst the opening credits. Did anyone actually see her anywhere?

Yes. Believe or not she is there. In the scene of the restaurant (actually when ecks meets his wife) fades in this picture like a memory where we have four persons talking... And just for a second we can see the beautiful Sandrine besides Ecks in the table, as a possible partner not menttioned along the movie. After that she probably died in the car explosion. I think her scenes were deleted for some reason, i don't know.
