Plot hole??

Billy Bob Thornton said he had never met Halle Berry before. However he was the head prison guard. Surely he would have seen who visited the men on death row, especially if P diddy only had one visitor, and Sonny seemed to have liked his son who drew pictures.

This seemed to be a hole in the film which made the story line a bit unrealistic.

Also how many traumatised people would want to have sex with a stranger after witnessing the death of their son not long after the execution of their husband? Again a bit unrealistic to me. But its a film so we should not look into these 'abnormalites' to real life?

Did the writers, director, producer or the said actors ever comment on this?

Prison guards handling executions would not be handling visitor guard duty. It's a different job description entirely.
Why would a death row prison guard be permitted to meet or even see the family of the men they are going to execute? Why would they even want to? How could they possibly be impartial and unemotional enough to complete their electric chair duty?
Also, I don't recall Sonny meeting her son Tyrell at all. He knew about Sean's drawing but not about Tyrell's.
Desperation and insufferable pain caused Leticia's character to be at the breaking point. The sex scene is over the top and even Roger Ebert said as much.
It seems the director wanted to convey two broken people, from opposing cultures, both suffering years of emotional abuse, finally letting go and seeking release.

He's not just a stranger. He's a man who stopped to help her, has been kind to her and knows what she is going through. Assuming that her husband had been in jail for a while and with all the issues in her life, it's been a while since she's had anything to feel good about, physically or emotionally. It would take a long time for her to feel good emotionally, but at least for a brief moment feeling good physically helped her to forget all that was going on.

I heard her say that the husband was in jail for 11 years, she seemed to moved on a bit during that time.

Yeah, it was a bit nuts how they were basically acting a porno with the different sex positions that they were doing. I would think that people who haven't had sex in years would start out with basic missionary.
