Because just like her husband got his last dessert on the night of his "monster's ball," Hank, a 'monster' to Sonny, and she, a 'monster' to her son, symbolically had their own combined monster ball...and thus their own 'last' dessert together...it was one night set aside without his father's intrusion or any other outside force interfering...she probably chose his chocolate ice cream to pay homage to how they met also---everything came full-circle and she decided that enough people had died already---why add one more? (assuming a gun was in her robe)
