Max and the lawyer broad die? Having sex and dying of old age? If they were ageing that quickly then they would have noticed it before they died of it surely?
And I thought the whole time thing was relative, and it only elapsed quickly or slowly in comparison to another room where you could see the effects of it?

I don't think that they would've noticed it because they were both in the same room together. So, unbeknownst to either of them, they were aging very rapid (perhaps in a matter of minutes) and didn't even know it. If you recall when Max and Julia first started running from Simon, Max could see Julia talking and moving real fast in one room and Julia could see Max going super slow in another room. I guess the reason they noticed the effects on each other because they weren't in the same room yet.

But to an outside observer, they would have appeared to have completed their whole sex scene in like 10 seconds. And then what? Wouldn't they have cuddled for a bit, and then put their clothes back on and continued through the maze?

Something must've happened to them that killed them right after their sex, before they could even put their clothes back on. And that something had to have happened really fast, before they ever even let go of one another.

You can say the same about the reality where the 6 people resting had died and mummified, so there is no point.
Only makes sense if you take it at face value: The reality in the hypercube is simply so unpredictably harsh on the particle level (stretching the space-time fabric), that people as organisms in some of the realities just cease to function, i.e. they die where they sit or stand and turn into inanimate matter.
