I know I just recently made a post so I'm sorry for taking up board space, but...
I like this movie and have seen it many times, but does it not seem odd that she is going to say that she was defending herself by killing him and yet his face is covered with blood and he's all beat up and, of course, dead and yet she doesn't have a mark on her? How does that work? Also, what does "piece of cake/ piece of pie" mean? haha I don't get it
The piece of cake/piece of pie thing was just something Slim and her friend said to each other a lot. I suppose it was supposed to refer to something in particular, but I think it also just came to be their way of saying I love you :)
Piece of cake (I love you)
Piece of pie (I love you too)

As for the plausibility of the self defense claim, I've just learned to accept movies like this at face value and not over-analyze details, because unfortunately there are always going to be certain plot points that don't make sense. Movies generally need to sacrifice plausibility in the face of artistic and/or dramatic license. Let's just enjoy watching her kick the piss out of that dude and turn him into a caricature of the sniveling coward he is throughout the movie. He would have never had the balls to take on someone in his own weight class.
