I'm curious about what happened to her? She vanished in the river in front of Manny and Sid after she gave them her baby and they turned their attention to him. It's rather unclear...

The implication seems to be she died and slipped into the current but they didn't want to come right out and show it since it's a family film.

Diego more or less killed her, if she hadn't jumped he would have anyway.

She died. The movie makers only decided its better to let her be taken off by the river, then to have a dead body on the screen
