So when Johnny Blaze is the Ghost rider for the first time he gets crushed by a truck. Later het gets stabbed by some punk. The stabwound has to be stitched, but he doesn't have any injuries from a giant truck smashing him?

Good question. Probably sloppy plotting by more than one scriptwriter is the explanation.
