I'm sure that the sex scenes are on a CLOSED set. It's done that way so they can have privacy and really feel like it's just them. I know for a fact that the actors and actresses wear pasties over their private areas (male and female sex organs). They are covered up.

as far as the pasties, wouldnt that only cover the nipple? thats still alot to see LOL
Actresses don't wear pasties. I saw Nicole Ari Parker's nipples a few times. When a woman does nudity, she usually shows her entire breasts. It's the bottom half that actors of both sexes cover up. They call them modesty pathches. But sometimes actors do full frontal nudity. The HBO show Oz had a lot of male frontal nudity from its actors like Christopher Meloni, who was also doing double duty on NBC's Law & Order: Special Victims Unit.
