why did the French mob want to kill him? I know it was the revolution, but what did he do?

He didn't have to do anything. He was an aristocrat, and that was enough for the mob. From their point of view, they were liberating D'Apacher's servants. Fortunately, the real D'Apacher was rescued by his servants, who vouched for his kindness and good character.

Yes, as I understand it the vouching was particularly effective because D'Apcher had hunted the Beast so many times and the peasants remembered his efforts, although he was spared execution only to be exiled.
