Seeing as you made this post I'm guessing you know how to use the internet. Took me all about three seconds to google "French Theives Coat" and I got pictures and the actual name you are looking for.
Remember GOOGLE IS YOUR FRIEND.

To give a more polite reply, the coats were based on what is called the highwayman coat. You'll be able to find period costume makers online who sell them. You won't find ones exactly like those made for the film, which had a long slit up the middle of the tail to accommodate the martial arts moves.
Actually, the long slit up the middle was to accommodate riding a horse.
Get off your arse lieutenant, there's a war going on!share
Liked the way the collars fastened up hiding the face.
shareAnd here I go thinking I was the only weirdo who thought those coats were the sh!t. =P

They kind of remind me of those long dusters you see in American westerns. In the Long Riders they helped cover your clothes to make you less identifiable later.
I'm glad you added that part about how the TRUE function of the back slit in these coats is to accomodate riding, not martial arts. This design feature is still popular today when riding in wet or rough terrain and long-coat coverage is desired.
