This might be reaching a little far, but I think I can explain.
The whole theme of the movie was about learning to understand women better. The night in the elevator was Matt's first time, so he didn't quite know how to connect with all those experiences (touch, scent, voice).
As far as not recognizing her voice, and this fits with the theme, Matt had a very shallow perception of women. For example, they all practically look and sound alike. Through Matt's point of view, we're shown the women of the Virgin Vault as stereotypes (the Tanner, the Algae Eater, the Purple Girl, etc.) But only after Matt starts talking to them, getting to know them, and connecting with them, we start to see more depth in them.
I know it's still a little difficult to believe that he was so shallow that he couldn't distinguish her from the rest of the girls (one of the few flaws in the movie), but it fits with the theme.
