That's not entirely what he said. That might have been his excuse, but they were talking about how they tried to make the timeline consistent with that line. But they said that to have them meet in elementary school and then "meet" again in college just didn't work for the story. They wanted viewers to believe they were meeting for the first time, and it woudlnt' have made much sense if they met in elementary school. They jokingly made a comment that the movie would be "Monsters Elementary." In the end, they scrapped the idea and just had them meet in college. So while he might have explained it as a figure of speech, the statement in Monsters, Inc. remains a loophole that couldn't be explained.
