Did Coach McGuirk date Paula?
Yes. Buut they only ever went out on one actual "date", that I know of, this was the pilot episode from season 1.

Did he score?!
No. The Date did not go well in Paula's eyes.

In the first episode, yeah McGuirk makes a play at Paula, and gets the turndown. But in the last episode (spoiler alert, possibly), it seems kinda like they make a sort of replacement family, and possibly there's a place for McGuirk in their lives. I think Brendon Small made it intentionally open-ended, so that the audience might come to their own conclusions. I like to think that McGuirk did get another chance with Paula.
