Significance of the kidney scene...?

I thought the kidney scene was great but I just have one question. Why was it even included? It had no bearing on the story at all. Her body never turns up, there's no mention of the killer wanting a kidney, and the character has no importance to the story at all. Why was this even part of the story?!

Originally it wasn't. The kidney scene (and the scene in the nightclub when the girl gets abducted) were both shot sometime after filming had finished. Apparently studio executives saw a working cut of the movie and thought that (1.) there was too long a wait until the first murder, and (2.) that the movie wasn't bloody enough. So the kidney scene was scripted and filmed, and in the process a whole new character had to be created, just to be killed.

She worked on the film. I remember saying how she busted her ass on all of Travis's projects.
