In my opinion it was to show there isn't going to be any more Carrie movies and if there is Sue won't be back so they killed off the character.

I can't believe they got Amy Irving to reprise her role. That's pretty rare when a sequel is made over 20 years later.

Just another way to show a connection with the original movie. Here, Sue was the "Miss Collins" of this movie, so had to suffer a similar, untimely fate.

i believe it was TO show that the innocent dont always survive (like carrie there were innocent people at the prom i.e. Tommy, Miss Collins, Frieda etc.) and they all die in that film and they were all innocent but died as a result of another person's stupidity like Sue here
