It's funny that you post this.
Last week I bought the Coen Brothers dvd box in a local dutch dvd shop. Although I watched most of them I currently like to watch all the movies a certain director have made. It's just nice to see directors patters etc. So I watched the Hudsucker proxy, O brother where art Thou (misspells soz) etc. And your post is similar to my opinion. O brother where art thou is such a great movie. The music, the screen appearance the story the resemblance to Homer just an epic movie but George Clooney kind of bothered me. He is just 'to much' like you state. But in some parts of the movie he is brilliant. But the global idea of his performance just pulled me out of the experience of post-reconstruction south feeling. To answer your question I wouldn't say Brad Pitt like sum suggested. Because although his performance sometimes irritated me I think tbh nobody could have done the part (or maybe sum fresh theater school graduate)better then George Clooney.
To add to your topic I would like to throw in a new ball. While I was watching the Hudsucker Proxy I had the same feeling with Tim Robbins. I think he is great in Arlington road and Shawshank Redempion but in this Coen movie his acting was very poor in my opinion. Still I think his looks (hairdo, clothing etc) nobody else could have done the part. Maybe that is (with exception of Jeff Bridges in Big Lebowski) the 'thing' of the Coen Brothers.
I think the 'thing' the Coen brothers are superior in is the way they can make certain era come back to life. The way the handle it scriptwise and technical makes them visual artists and the 'puppets' who make it real are not that important. So to conclude I think the only option for this movies was George Clooney cuz they could just work 'nice together' without any complications.
