What did KGB mean by…

“Flops down monster, should have paid me off on that” and looks at Grammar like it was his fault

reply

The flop - first three 'family' cards from the dealer.

A monster - a almost unbeatable hand ('The Nuts' is a unbeatable hand)

Paid me off - just like it sounds, bet almost any amount with your better hand and the player holding the 'monster' will (should ) pay off.

Ok, when he says “should’ve paid me off” it’s framed like he’s talking to Gramma and not Mike for some reason.

Yea he was baffled.

If I recall, that is when Mike caught his 'Oreo tell'. KGB then figured that out and wiped his cookies from the table.
