Alejandro threw her under the bus and pissed her off.
Basically, that dance was considered extremely inappropriate-- maybe not for commoners, but definitely for the nobility. Very sexual. Elena was supposed to be a young lady, so it was improper for her to partake in such a dance, and it reflected badly on her adopted father, thus, he was angry with her.
Alejandro, instead of doing the gentlemanly thing and taking the blame for the dance-- after all, it was his idea-- basically blamed her and said that it had been her suggestion ("So that is the way they are dancing in Madrid nowadays?"), thus miring her in deeper trouble with her "father", who already thinks she's too wild for her own good. Of course, it was a good move on Alejandro's part, since he could fall from Montero's favor and Elena couldn't, exactly, but it made her pretty mad.
