The extended version is definitely a lot better, I'd certainly say it improves it by at least one star. (Certainly better than the weaker MCU films, whereas I'd rate the shorter version as worse. Not as dramatic as the difference between the Daredevil director's cut and cinema version, though.)
To be honest, I wouldn't be surprised if it eventually got released... but at the same time, I also have my doubts about a Blu-Ray release for the extended cut, which is a shame- they put the time and money and effort into it, but it's already been eight years and still no release on Blu-Ray eight years later.
Here's to hoping it will one day. I thought the films were cheesy, good fun, and I wouldn't mind seeing the Extended Cut in HD.

20th Century Fox have stop printing BluRay's of the "Fantastic Four" movies besides the reboot just like Dreamworks refuses the continue printing their original animated movies on BluRay (pre Shrek). They are ashamed and I don't know why.
I wonder as well. The Silver Surfer got an extended release and now finally Independence day 1 is finally being rereleased with both theatrical and extended version. So who knows how the suits think .
