How could he tell the guy was well-fed? I kinda sorta understand the "light mount" (maybe a heavy horse clomps the ground harder?"

McTiernan's 2nd Disc Director's Cut is 85 minutes of brutal, breathless dialogue explaining this that ends with "...yeah, well, anyways.." then goes into the next scene from the regular cut. It being excised from the final cut is what some say drove him off the set. Others, aren't so sure...

I think you can tell that people are well fed by looking at them. 'Course, nowadays everybody is well fed, by the standards of that time.

Smell. If you've been eating meat, you smell different. If you eat a lot of meat, you have a sour smell thus well fed. If you eat grains, you have very little smell. It seems weird, but lately I've been paying attention. If you try, you can smell if it's a deer that's been in your back yard, or if it was a dog. Humans can smell better than you think. You can even tell the difference between people by what they touched. Check out Richard Feynman on smell. He wrote a piece on it.
