Can anyone tell me the info on the music score that comes
at the end of Taste of Cherry? (i.e. who is it by, what is it called?)

The Jazz music playing at the end of film is called "St. James Infirmary" by Louis Armstrong. I had to watch this film in my FILM AND TV class at UCLA. It is pretty amazing for the fact there was no script and no major character ever met each other.

Isn´t it "Angel Eyes"?

It sounds preety much like Angel Eyes and I thought it was a very good touch, cause it´s a music about saying good bye for not finding beauty in what you see.

No, it's definitely not Angel Eyes, though I can see why you might have confused the two.

I'm a jazz trumpeter. It is absolutely St. James Infirmary.
Angel Eyes does have that minor blues shuffle happenin' as well though. They are two of my favorites to play.

I couldn't remember how the lyrics are about death, but I knew that they were. So I looked it up. Here's how Wikipedia quotes Louie Armstrong's version of the first verse:
