I don't know, it's not really done in a hard R rated fashion like some animated films like Akira or even Cowboy Bebop. I would actually rather show this film to a young child than something like Grave of the Fireflies, which is more disturbing and "adult" to me.
All of the violence in this is appropriate with the theme of a fantasy/adventure setting. Sure, people do get decapitated and have their arms taken off by arrows, but if you notice it's done in a really artistic and stylized way, as there's no realistic blood spurts or any gore. Their heads and arms sort of pop off cleanly in a cartoonish manner. You'll also notice that the village massacre scene cleverly doesn't show any extreme violence other than the bad guys getting their due from Ashitaka. It's all very tongue in cheek, like with the Nazis getting their faces melted off in Raiders of the Lost Ark. There is a term for this, and it is known as "fantasy violence," where it is designed to not look real, and children will recognize it as such, as it offers a clear distinction between fantasy and reality.
Or I'd say this film is appropriate for kids in the same way that Lord of the Rings is. Yes, there are dark themes and violence, but in a way that is befitting of a fairy tale setting.
