Thoughout the movie, it was Kevin Kline and Joan Cusack who were getting married. At the very end, his parents renewed their vows because his mom wanted a wedding.

Mom and Dad had the last wedding/or actually a renewal of vows...and because all those fabulous flowers and food and whatever were probably left there after the wedding fiasco on Sunday...the graduation was on Monday, so, why waste all that stuff, eh? Maybe Mom dug out her old wedding gown or bought a new one but the decorations and flowers and such looked like the same ones for her son's wedding.
