Would the blood tests that were done...


Have actually revealed the sex of the person being tested (in this case, Castor Troy in Sean Archer's body)? The tests included blood type (so obviously that would have been revealed), WBC and RBC counts, hemoglobin and hematocrit, and maybe one or two other things. While reference ranges for some of the tests might be different depending on sex, there is usually considerable overlap of sex-specific reference ranges for the tests that were performed, and there are many possible causes of hemoglobin and hematocrit levels, etc. outside of normal ranges. Perhaps there should be some mention of this in the "goofs" section?

No, not really. Aside from genetic testing, which was not common when this movie was made, there's not really a "this is a man/woman" indication for gender with routine blood testing. I have caught incorrect patient identification based on blood type, though.
